As a working Mommy I get that meal prep is totally more than
half the battle in living a healthy fit lifestyle, below is a fabulously easy
HEALTHY recipe to get you inspired in the kitchen!
Crockpot Chili
Prep Time: 30 Min
Cook Time: 4 Hrs High Or 8 Hrs Low
*This is a recipe for a LARGE crock pot, if you have a small one cut the meat, onions, bell peppers & tomato sauce in half (1 pound of Meat, 1 large onion chopped, 2 bell peppers chopped & 14 oz of tomato sauce)*
Ingredients:
-2 Pounds of Ground Meat (Beef, Chicken Or Turkey)
-3 Cloves of Minced Garlic
-2 Large Yellow Onions - Chopped
-3 Bell Peppers (Red, Yellow Or Green) - Chopped
-1 Can Of Red Beans
-1 Can Of White Beans
-28 Oz Can Of Tomato Sauce
-2 Cups Of Broth (Beef Or Chicken Depending on which meat you choose)
-2 TBSP Coconut Oil
Seasonings:
-Oregano
-Adobo
-Paprika
-Chili Powder
-Taco Seasoning
-Pepper
-Sea Salt
-Cumin
1. Season your ground meat to taste – I use adobo! Add 1 1/2 tbs of coconut oil to a frying pan over medium heat, add ground meat and brown it! Once you’re done browning the meat add it to the bottom of your crockpot.
*Depending on what kind of meat you choose to use it will let out grease into your frying pan (LOTS of it if you use ground beef), make sure to drain all oil from the frying pan before removing meat from the pan.*
2. After draining & removing meat, add ½ TBSP of coconut oil to the same frying pan; sauté your chopped onions, bell peppers and garlic until they are nice and soft. Add a pinch of sea salt to taste. Once this mixture is fully cooked layer it on top of your cooked ground beef in the crock pot.

3. Next, drain your cans of beans and add them on top of the
sautéed onions, peppers & garlic inside the crockpot. Add your tomato sauce
& broth on the top layer over the beans.
*Make sure you gently move the mixture with a spoon to ensure that the tomato sauce & broth mixture get all the way to the bottom of the crock pot.*
4. The last step of this Crockpot masterpiece is to add any of the seasonings listed above into the crockpot. If you like it spicy, add more Chili powder, Paprika & taco seasoning.
*Make sure you gently move the mixture with a spoon to ensure that the tomato sauce & broth mixture get all the way to the bottom of the crock pot.*
4. The last step of this Crockpot masterpiece is to add any of the seasonings listed above into the crockpot. If you like it spicy, add more Chili powder, Paprika & taco seasoning.
This recipe cooks in the crockpot on High for 4 hours or on Low for 8
Hrs. You can eat this dish on its own or have some brown rice on the side.
